Della Valle - Iappelli
The "Front Man" is the eclectic Francesco Saverio Maria Iappelli, chemist - physicist, oenologist and lastly theologian.
But the story goes back a long way, with its roots at the beginning of the last century.
He is the third of six children of Alfredo and Emma Della Valle. Since he was a child he participated in the peasant life of the Della Valle family which took place in Casertavecchia, an ancient medieval village and first settlement of the city of Caserta.
He learns an ancient winemaking tradition, which has been handed down since the beginning of the 19th century.
Coincidentally at Vinitaly, meeting the owner of the Della Valle grappa company in Vigliano d'Asti, he confirmed that the origins of the Della Valle family are from Monferrato, where they were Marquises and from where the branch that broke off to the Caserta area started.
This would explain why the wines he produces following the family tradition are often referred to by experts as "Bordeaux wines". (Repubblica)
He actively participated in the chemical-physical characterization for the valorization of the Pallagrello Nero, Pallagrello Bianco, Casavecchia and Coda di Volpe vines. These studies were the subject of his specialization thesis, deposited among the official documents of the aforementioned Faculty of Agriculture.
By starting to produce with his own brand, he intended to follow "THE FAMILY SECRETS" and not the "international" wine strategy, but wanted to try to work on these vines in purity, refining his processing method with file and rasp. , obtaining a strong identity that can be constantly found between the various vintages, long-lived wines, but above all very fragrant, with great aromatic persistence, aromas that are difficult to find so intense in the wine panorama.
The old-fashioned processing with manual maturing, by gradual oxygenation and the lack of addition of adjuvants to the wine during aging in fine French oak barriques, has allowed the wines to last over time being very rich in anthocyanins and polyphenols, which do not have been removed from the wine, as cellar procedures usually require. This quality has been recognized over the years by various guides, (Quattrocalici) but above all by an international clientele of true connoisseurs.
Currently the company is included among the wines of Terre Estreme di Treviso, a group of small and medium-sized companies specialized in procedures to be passed down, with rare vines, or those found in inaccessible areas.
From an early age he was involved in winemaking and learned to fall in love with farmers and the land. In the family history, some rare berries have been preserved of which we are currently the only producers, and of which there is a photograph with the vineyard with "Uncle Pasqualino" from the early twentieth century.
The family had been involved in winemaking since moving from Piedmont. Documents are preserved that mention the hereditary transfer of the vineyard in 1908. It should be noted that at the time declaring an area as a vineyard entailed greater taxation, only those who had valuable grapes did so. It was a way to prohibit anyone from passing through your property, including hunters.
Francesco attended the post-graduate specialization school in oenology at the Faculty of Agriculture located in Portici (Naples). There he directly followed the work on the native Campania vines, collaborating with various wineries awarded by the guides.
