Cultivation is usually low espalier with Guyot or spurred cordon pruning.
It is a berry that can reach very high sugar levels with wines that can even reach 15 degrees. It has low acidity, therefore we intervene in the vineyard seeking the right balance.
Our process resumes the ancient one, the fermentation takes place at the beginning in the presence of the skins.
The result is a very aromatic and complex wine, with persistent aromas. You can see the Williams pear, white flowers at the bottom and a citrus tone.
To fully manifest its aromatic characteristics, oxygenation is necessary for 15 -30 minutes and even longer, the use of the peels makes it resemble reds in this way.
The wine produced, being full of tannins extracted during fermentation, can age, and shows good softness.
The presence of tannins makes it a white wine with a good content of antioxidants, and therefore with a good healthiness index, as a prevention of various pathologies (as happens with red wines).
The wine is deep yellow in colour, on the nose it has aromas of fresh fruit with a predominance of notes of apple, Williams pear, citrus fruit, honey and dried fruit. Fresh with a warm taste with ageing, balanced, with balsamic notes, with intense flavor that brings us back to the volcanic nature of the soil. Decanting is recommended.

PALLAGRELLO Rosè
ROSA D'AUTUNNO
This wine comes from 50% Pallagrello nero grapes, 50% Aglianico grapes vinified in white. It is a very delicate wine that pairs very well with great cuisine.
Rapid passage of the must on the skins, then "white" fermentation in steel. The fermentation temperature is free, but given the altitude it does not reach high temperatures, we tried to reduce the production of fermentation aromas, tending to highlight those of the berry.
The wine has a beautiful candy pink colour, very fragrant with very delicate aromas ranging from floral notes of dog rose, passion fruit, hints of cherry and black cherry. The taste is characterized by a notable freshness associated with a good body and flavor which pleasantly prolongs its persistence.

PALLAGRELLO Rosso
SAN ROCCO
It is a black grape variety, ripening takes place around the beginning of October, its location is in the IGT Terre del Volturno which mainly includes the upper Caserta area starting from the hills of Caserta on which Casertavecchia is located, the ancient medieval town of Caserta which is located 400 meters above sea level.
The cultivation is currently mainly low espalier with Guyot pruning.
The grape variety is characterized by very similar tannins which allow the wine to generally be ready within a couple of years. However, the tannins are very delicate and must be immediately integrated with wood tannins, therefore we use the passage in barrels. In particular, our company uses fine French oak barriques of various essences.
The red wines are processed by our choice also with manual maturation as well as pumping over, to allow greater and more natural oxygenation.
The aging is completely spontaneous-natural, it takes place for approximately 8 months in fine French barriques of various essences as already mentioned and no oenological products are added (casein, albumin, etc.), then the aging in the bottle continues.
The aromas are typical and very intense, the wines are positioned in a way that is not comparable to others in terms of aroma and perfume.
They have a high aromatic persistence which manifests itself very well even the day after opening the bottle.
They are particularly healthy and rich in antioxidants as they have not been depleted by oenological treatments. It is an elegant wine, with a harmonious structure and an intense ruby colour; with very delicate aromas ranging from floral notes of dog rose, red fruit with prominent plum, spicy notes of coffee and liquorice. Very intense aromas and aromas, decanting is mandatory. Delicate on the palate, it involves the entire oral cavity in a harmonious way.
